Helado de Paila is a traditional method of stirring all-natural ingredients in a bronze pan over ice, that originated in the high Andes of Southern Colombia in the 13th century. It’s not quite as quick as a squeeze of soft serve, but it’s a labour of love. And anything this delicious is worth the wait.
